Produced by Union y Fe cooperative, San Ignacio, Cajamarca, Peru. Shade Grown at 1700-2050m altitude. Washed Process. Coffee cherries are de-pulped the day they are harvested, then set in tanks to ferment for 50 hours. The coffee is then washed with clean water to remove mucilage, and sun-dried in specially built raised drying modules. The coffee is carefully turned and moved up to 7 times a day to ensure uniform drying, and the entire drying process itself can take up to 30 days.
Union y Fe was founded in 2014. The cooperative has 250 producers who farm a total of 873 hectares of coffee. They are dedicated to preserving the natural environment and upholding organic production standards. Although just a few years old, the members of Union y Fe have a clear vision of their goals as an organization, with environmental consciousness and producer wellbeing at the top of the list. They also help producer members maintain food security by showing them how to raise small animals and maintain vegetable gardens.
