Cascara is the skin and fruit of the coffee cherry. It is removed during the wet pulping process on washed coffees. In most cases, the skin is discarded or added to compost. More coffee farms are finding that treating the cascara with care after the pulping process, sorting, washing, cleaning and drying it carefully creates a new product for them. The cascara is dried for 24 hours on raised beds in the sun, then finished in a green house for 5 days. This Cascara is from one of the most well regarded farms in Guatemala. Their attention to detail shows through in the wonderful quality grade and flavor of this tea. Cascara has a sweet and syrupy character highlighted by bright fruit tones.

USE 18g (3 TBSP) OF CASCARA TO 300g (10oz) of HEATED 200ºƒ WATER JUST OFF THE BOIL. STEEP FOR 4 MINUTES, STRAIN AND ENJOY. BEST BREWED IN A FRENCH PRESS POT.
To Cold Brew, add 100g of cascara to 1 liter of clean filtered water, and let it soak for 24 hours. Strain and refrigerate. Great for cocktail mixers, sodas, and beer infusions.
