Our current decaf coffee is a special one... we don't see too many decaf coffees processed with the honey process, where coffee beans retain their fruit mucilage after depulping, and are dried with this mucilage on the bean, creating deeper body and more complex flavors in the finished product.
Marcala decaf is from Honduras, La Paz from a collective of growers in the Marcala Region. The coffee arabica varieties are Red Catuai, Yellow Catuai grown at a high altitude of 1450m.   The coffee is then shipped to Descamex in Mexico where the caffeine is removed with pure water from Pico de Orizaba using
a water saturation process similar to the swiss water process, that removes caffeine without the use of chemicals.
