    Our Forge Coffee Hephaestus Holiday Gift Box ships in our signature "set your mind in motion" character mailer box, printed with exclusive original art by Jon Ventura, a local Los Angeles artist who we collaborated with for the box art.  Included in each bespoke box are two festive bags of coffee, a sticker sheet, all wrapped in custom Forge Coffee tissue.

      DESCRIPTION:

      Fragrance and aroma of creme brulee and lemon grass. Notes of apple, blueberry, lemon, raspberry, sweet tea and white sugar. Aftertaste of baking spices, vanilla, cinnamon and black tea. Mild lemon-forward acidity with malic and citric acids noted. Creamy mouthfeel and medium bodied.

      The Huke washing station receives cherries from more than 600 growers around the Gotiti kebele. The washed processed coffees are depulped within 8 hours after picking and the mucilage-covered parchment is submerged in water for a 36 to 48 hour fermentation, depending on the conditions. After most of the mucilage is consumed, the coffee is fully washed in canals with running water until the water is completely transparent and all of the mucilage is completely removed from the parchment. 

      After fermenting and washing, this premium coffee is laid out on raised beds under a shade net for 5 to 7 days until the moisture content is between 11 and 12%. The coffee is then moved inside a nearby warehouse for final homogenization and resting until it is ready to be transported to the dry mill.

      The Huke washing station is owned by Testi Trading and operated by the Yonis family and their team. Testi Trading makes significant investments in the communities that they operate in through their Project Direct initiatives. So far they have completed construction of multiple primary schools and even the first ever high school in the town of Hamasho, a small town in Sidama.

      ABOUT THE COFFEE

      This intriguing natural from Coopedota's special selection of coffees
      grown around their processing facilities in Santa Maria is always an
      adventure. 

      El Vapor, "The Steam," is a special selection of coffee from the heart of
      Costa Rica's coffee lands, in the town of Santa Maria de Dota.
      Santa Maria is home to one of Costa Rica's finest cooperatives,
      Coopedota. It is the world's first certified carbon-neutral coffee exporter,
      but it's much more than just a supplier with a great certification. The
      cooperative integrates social services and environmental protections
      while producing some of the highest quality coffee available in Costa
      Rica.

      CoopeDota's farms stretch deep into central Costa Rica and while they
      produce a significant volume, they also are deeply invested in highlighting
      exceptional microlots. Coopedota provides members with educational
      opportunities in addition to access to wet and dry milling services, yet the
      outreach extends far beyond processing: coffee by-products are used to
      fuel the mechanical drying guardiolas and water use during processing is
      reduced by using eco-pulpers. The cooperative manages trash pickup in
      the city of Santa Maria de Dota and has been able to repurpose waste
      into renewable forms of energy.

      El Vapor is comprised of the classic Central American combination of two
      short-stature cultivars: Caturra and its hybrid offspring, Catuaí. Caturra is
      a single-gene mutation of Bourbon, first reported in 1937 along the border
      of Minas Gerais and Espírito Santo, while Catuaí springs from a Brazilian
      cross of Mundo Novo (a spontaneous Bourbon-Typica hybrid) with Yellow
      Caturra. It was developed in the 1940s but not released into the public
      domain until 1970s. It retains the short stature of its Caturra heritage. The
      small size allows for dense planting and high per-hectare yields.

      Bali Kintamani Grade 1 Triple-Picked Green Coffee Beans

      Five farmers in the Kintamani Highlands, with farms spanning 1,300-1,600masl, collectively produced this lot of Grade 1, Triple-Picked Bali green coffee. The intercropped farms, with their humus-rich soil influenced the classic and full flavor profile of the coffee.

      Citrus was once the main crop, rich volcanic soil and higher altitudes in the Kintamani Highlands gave rise to dedicated coffee farming, nurturing Bali coffee beans that result in a classic, clean cup with mild intensity and full body.

      What is Wet Hulled Coffee Processing (Giling Basah)?

      The wet-hulled coffee process, locally known as Giling Basah, is the method of choice in Indonesia due to the humid climate. The wet-hulled process has become synonymous with Indonesian coffees and contributes to its unique cup profile.

      In the wet-hulled process, coffee cherries are generally depulped at the farm level using hand-cranked machines. The cherries are then fermented overnight to help break down the mucilage, which is subsequently washed off. Afterwards, the coffee is quick-dried to 30-50% moisture and dried to between 11%-13% as it makes its way through the supply chain into an exporter’s mill.

      Indonesian Coffee Beans

      The key Indonesian green coffee regions include Aceh, North Sumatra, South Sulawesi, West Java, Bali, and Flores. Java, in particular, is renowned for its pivotal role in spreading coffee production across the Indonesian archipelago. While regions like Sulawesi and Sumatra boast a long history of coffee cultivation, Bali represents a relatively newer coffee-growing area, primarily known for its small-batch, limited-scale coffee production.

      Q: "Should I get Whole Bean Or Ground?"

      A: Whole bean coffee will maintain freshness and quality for longer than ground coffee.  Oxidation is the enemy of the flavor of coffee.  Whole bean coffee simply presents less surface area to the open air over time, providing for a longer window of freshness and optimal drinkablility.  We recommend only grinding what you need to prepare your drink at each sitting.  We understand however, that not everyone has a grinder that may enjoy great coffee, so we have made our offers available ground for drrip in our gift box during the holidays.

      Q: "What is Hephaestus?"

      A: Hephaestus is the mythological Greek God of fire, blacksmithing, and metallurgy.  We thought that Hephaestus was an appropriate mascot for our line of coffees that are a cut above normal specialty coffee.  Hephaestus lots are always limited, purchased in small quantity, and are usually gone before you know it.  These coffees display unique flavor profiles not commonly found in most coffee.  When you see the Hephaestus mark on one of our coffees, you know that it will be special.
