Israel Paz and Concepcion Ortiz, Global’s team in Mexico, strongly believe that the community of Santa Cruz Acatepec has the optimal geographic characteristics to produce some of the best coffees in the region. Throughout the 4 years that the Global team has been working in this area, producers have made improvements in their wet processing practices, such as controlled fermentation and drying on African beds resulting in slower drying processes.
