DECAF COLOMBIA HUILA EA (sugarcane process)

Mild, sweet, soft and citric, creamy mouthfeel, with graham cracker flavor.
This is a great coffee, especially as it cools, displaying some soft cherry and chocolate.  We were surprised by how it cupped more like a conventional coffee.  This is a great decaf that holds up to a hand pour v60 extraction and consumed black, but will equally play well with cream and sugar however it is prepared.
Region: Huila
Farm: Various smallholder farmers
Variety: Castillo, Colombia, Caturra
Altitude: 1200–2100 masl

Colombia EA process Decaf is custom decaffeinated in Colombia, using a special, natural process that utilizes a solvent, ethyl acetate, made from fermented sugar. The process works by soaking green coffee in the solution, which bonds to the caffeine and allows its removal. The green coffee is steamed at low pressure to remove the ethyl acetate. The finished product retains its flavor integrity, but contains almost no caffeine at all. (The beans will contain a maximum of 0.01–0.03% caffeine.)
